You'll have to search long and hard to find something that is free and matches Sibelius.
The latest version is Sibelius 4 and is around $600. You can get minor upgrades for each version (for example, a new playback function or a new MIDI set), but can't upgrade from Sibelius 3.1 to Sibelius 4.
If you're a beginner and start to use Sibelius, then you have as much chance as a snowball in hell.
Sibelius is primarily for writing out your music in note form - sheet music. And it does it abnormally well.
If you just want to use it to create MIDI's then it is a real waste of space and time. Instead use what sciencekid has recommended. It's a good program for just churning out single instrument MIDIs. There are probably other programs that can make many instrument MIDIs, and I believe you might be able to do in Anvil, but oh well...
So, recap:
Beginners (who know nothing or very little about the theory of music and what not) - Use Anvil
Musicians (who know some of the theory to all of it) - Use Sibelius
Any usable links with anvil? Ive been meaning to learn to make music on the computer, because im sick of using copywrited music in the movies I make. If I was to submit them into a film festival, I would be fucked.
Plus, I choose not to use copywrited music, because 99.999% of the time it sounds like my groin. Though when im first using the music program, it probably will too, but still.

The chances are that you'll be able to find a program somewhere that will allow you to save and/or export tracks as wavs, or you could try and find a MIDI to wav, or to MP3 convertor.
I've never been able to remember whether it's converter with an "er" or with an "or"...my spell checker usually sorts it out.
I wonder if it's possible to create a spell checker for the forums...it'd sure help with all the typos...
