No, you don't have to reprogram anything. You can make your own menus and battle systems if you wish. I'm currently working on a battle system very similiar to the one in Chrono Trigger, including battle animations of your characters.

If you mean to change the wording, it's in the Database, under the "Vocabulary" tab, and then under the "Terms 5" tab. The wording is on the right side.
If you mean the title graphic, it's under the "System" tab. Hit the "Set" beside the current title graphic. Don't forget, to use custom graphics, you have to import them, using the "RAW Material Editor", or stick 'em in your RTP folder.
Head over to http://www.rpg2knet.com/ and look up their "Tutorials" section. They have various tutorials including, but not limited to:
Hiring Mercenaries
Having Weapons add skills
Creating your own character sets
creating both Custom Menu Systems and Custom Battle Systems.
Rpg2knet has some great tutorials, while the battle system tutorial is a little lacking. Let's just say it's not entirely suitable for a newbie unless you want to make a "leap forward and make the enemy flash just to wait for it to counter attack you" battle system.
