Pasta (shells) with White Sauce
PASTA WITH WHITE SAUCE. Serves 2/3~01 [ingredients] > 12 oz pasta (shells) > 1 bunch broccoli, sliced long > 1 zucchini, chop on a diagonal bias and slice into 4ths. > 2 cloves garlic, minced/diced > 1 tbsp sea salt > 2 tbsp goat cheese > 1/4-1/3 cup goat milk 02 [preparation] With pasta, it's pretty easy to weigh-in at around 1lb; 1-2 dozen pasta shells can weigh 12oz, or 375 grams. For the purposes here, use 12 oz of pasta, and, for every 12 oz pasta use 1 qt of water. Set the water in a pan to boil. When it starts to boil, add 1 tbsp of sea-salt, and then add your pasta. At 5 minutes before the pasta is done (usually it takes pasta from a bag 10 minutes) start on the sauce. Begin by frying your chopped zucchini in some vegetable oil and garlic (stir to avoid burning the garlic). It really should not take long if the pan is already hot (2 minutes), and set aside. At this point, blanch the broccoli with the pasta (that's still slightly undercooked). Back to the sauce pan: add goat milk and wait until it's hot before you add goat cheese (to melt). You probably want to add thyme or tarragon or some pepper. You'll know it's done when it behaves like a sauce. The pasta will be done at the same time with the broccoli. |
